Despite the rising cost of beef in 2015, steak continued as a leading full-service segment. The menu category’s sales are up 6% to $10.9 billion, and unit counts are up 2.1% to 2,761. Outback Steakhouse continues to lead the category, but Texas Roadhouse, which increased sales by 13.2% over 2014, is close on its heels.
