More than a third (38%) of consumers increased away-from-home breakfast purchases last year, Technomic reports, and many want healthier weekday options. To that end, Corner Bakery fast-tracked its veggie-focused Anaheim Scrambler to a regular menu item, says Ric Scicchitano, executive VP of food & supply chain. The positive guest response gave way for the fast casual to expand its morning menu.
