2. Front-of-house VR
Virtual reality headsets transport customers of apocalypse-themed Philadelphia restaurant Mad Rex to alternate realities while dining. Similarly, Baptiste & Bottle in Chicago added a $95 cocktail experience, with a VR headset to take imbibers through forests from which the cocktail’s liquor is sourced.
3. Small-town food halls
Food halls are expanding from major urban markets to tertiary cities and suburbs. Lexington, Ky.’s The Farm opened in September; Legacy Hall is set to open this month in Plano, Texas; and residents of suburban Annandale, Va., can nosh at Asian-focused The Block.
