Paul Fleming, co-founder of P.F. Chang’s and Fleming’s Prime Steakhouse & Bar, launched this seasonally focused concept in 2007, where all food is grilled over a live fire. Last year, the brand debuted a prototype called Paul Martin’s Austin Grill in Austin, Texas. The new unit shares a seasonal focus, but emphasizes local sourcing as well.
