I'm excited about working with Paul W. Marks Company, a supplier that carries artisanal cheeses from around New England. At this point, our cheese program consists of three cheeses, but he (Paul Marks) is partnering with us to build it to seven. I'd like to incorporate the Seaport honeycomb into the cheese plates as well. The hotel has five honeybee hives onsite, with approximately 270,000 bees, and we're expecting more to check in soon.
