It doesn't make any business sense to offer complementary bread. Not only are you giving away a product for free, it may keep the guest from ordering more appetizers and first-course selections. In addition, you must factor in the cost of labor, ingredients and breadbaskets—none of which help the bottom line. On the contrary, it makes perfect sense from a hospitality point of view. The trend now is to charge for bread, however we see that as the exact opposite of being hospitable. We want to welcome guests into the restaurant and the gesture of a complementary housemade breadbasket when you sit down is one of the first things many of our guests notice. This creates loyalty and repeat visits, which makes it worth it in the end.
