La Boulange founder opens new bakery chain

La Boulange founder Pascal Rigo announced that he will this week begin opening a new bakery-cafe chain, following Starbucks’ shutdown of La Boulange’s standalone locations earlier this year, the San Francisco Business Times reports.

Rigo’s new concept, La Boulangerie de San Francisco, will open its first location Thursday in a former La Boulange unit, the Business Times says, followed by six more outposts over the course of six weeks.

Starbucks, which acquired the bakery-cafe concept in 2012, continues to sell baked goods under the La Boulange brand. The coffee giant brought on Rigo as a senior vice president to develop recipes, but he later left the company. 

As Restaurant Business reported last week, other former La Boulange locations may be bought by California-based fast-casual Lemonade.
