Kobe Beef Skewers in Tamari Soy Sauce

Marinated Kobe Beef Skewers:
1⁄2 cup Kikkoman Tamari Soy Sauce
2 tbsp. mirin
2 tbsp. sake
2 tbsp. chopped green onion
11⁄2 tsp. minced fresh ginger
11⁄2 tsp koji miso
1⁄2 tsp. Asian sesame oil
1 crushed garlic clove
11⁄2 lb. Kobe beef ribeye

6 cups dashi
1⁄4 cup Kikkoman Organic Soy Sauce
2 tsp. salt
48 (1 x1 x 1⁄2-in.) pieces daikon radish
48 (1 x 1 x 1⁄2-in.) pieces kabocha squash
24 black mission figs, stemmed and halved
48 (6-in.) bamboo skewers
Currant Teriyaki Sauce (recipe follows)
Plum Shiso Sauce

1. Whisk together tamari, mirin, sake, green onion, ginger, miso, oil and garlic. 
2. Cut beef into 48 (1-in.) cubes; marinate in tamari mixture 1 hr. 
3. In large pot, bring dashi, soy sauce and salt to a simmer. Add daikon and simmer about 10 min., until still slightly resistant. Remove daikon and cool. Cook squash in same manner.
4. Thread each skewer with 1 beef cube, 1 piece daikon, 1 piece squash and 1 fig half. 
5. To order: grill 2 skewers, turning frequently, until beef is med. rare. Brush beef with 2 tsp. Currant Teriyaki Sauce and vegetables and figs with 2 tsp. Plum Shiso Sauce; serve.
Yield: 24 servings

Currant Teriyaki Sauce

11⁄2 cups Kikkoman Organic Soy Sauce
3⁄4 cup mirin
3⁄4 cup sugar
6 tbsp. crème de cassis

In saucepan, simmer all ingredients over med. heat, stirring frequently, until thickened.

Plum Shiso Sauce

1 cup Kikkoman Plum Sauce
1⁄4 cup water
1 tbsp. chopped shiso leaves

Whisk plum sauce, water and shiso to blend.
