At Brown Bag Seafood in Chicago, the menu is printed on a brown paper bag to reinforce the fast-casual’s name and marketing message. The menu’s grid format doubles as an order form—customers check off their seafood selection and choose the prep method and presentation. Each of the 12 items can be ordered in a sub, salad, taco, straight up (as a plate with a side) or in a powerbox (a quinoa, wild rice and spinach bowl).  Sides, veggies, soup and drinks can be ordered off the bag, too.
