Sharky’s, a regional California chain, makes it appealing for children to try fish by menuing it as a mesquite-grilled salmon “finger” and plating it in a grownup presentation. Accompanied by brown rice and grilled vegetables, the entree offers kids a healthful dish with mellowed-out Southwestern flavors. 

Ingredients

2 oz. wild-caught salmon
Vegetable oil
Salt and pepper, to taste
3 oz. fajita vegetables, cut into strips (red and green bell peppers, summer squash and red onion)
1/4 tsp. dried oregano, to taste
2 to 3 oz. cooked brown rice

Steps

  1. Brush salmon lightly with oil; sprinkle with salt and pepper to taste. Grill over mesquite coals 5 to 6 min. until cooked through, turning once.
  2. Meanwhile, heat 1 tbsp. oil in large skillet. Add vegetables, oregano, and salt and pepper to taste; saute 3 to 5 minutes or until tender-crisp.
  3. Heat brown rice and scoop onto plate. Top rice with grilled salmon; arrange vegetables on the side.
