Poultry: Strutting its stuff

Poultry is pulling its head out of the sand and strutting its stuff. With so many varieties like chicken, turkey, duckling, goose, even pheasant and ostrich, you really have the ability to satisfy the flock. Team up barbecued ostrich fillets with grilled summer vegetables like squash and zucchini. Add some spice with sautéed chicken, couscous, and a jalapeño salsa. Try a grilled duckling arugula salad with an orange vinaigrette. Poultry is so versatile you can grill it, bake it, barbecue it, sauté it, fry it, even broil up cubes for kabobs, or boil it to make stock. Anyway you slice it poultry can please. Put poultry on your menu and watch it take flight.
