In May, SBE, the hotelier behind restaurants Katsuya and The Bazaar, spun off its food and beverage arm under the name Disruptive Restaurant Group to grow its concepts outside of SBE’s properties. It will also consult with other hotels to build culinary programs.

Among the new entity’s first acts: a partnership to develop and run food and beverage at the James Hotel in West Hollywood through alliances with star chefs—its go-to strategy.

It’s not all avant-garde and artistry, however. In October, DRG raised its stake in the Umami Burger chain, becoming the majority owner, with plans to grow it by eight to 10 units each year and explore more fast-casual formats and larger footprints.
