Angel Hair Pasta With Cilantro-Mint Pesto

A brightly flavored pesto is a terrific topping for angel hair noodles. Peanuts, garlic, mint and cilantro, with lemon juice and vinegar combine to make this zesty sauce.
Ingredients
For pesto:
1 1⁄2 cups dry roasted peanuts
4 garlic cloves
1⁄4 cup gingerroot, grated
2 cups mint leaves
3 cups cilantro leaves
1⁄2 cup Pecorino Romano
3 tbsp. lemon juice
2 tbsp. lemon zest, grated
1 cup vegetable oil
1⁄4 cup rice wine vinegar
2 lb. angel hair pasta, cooked and rinsed
1 1⁄2 lb. chicken breast, grilled and cut into 1-in. strips\
For garnish:
1 cup mung bean sprouts
1 cup cilantro sprigs
1 cup shredded carrot
1⁄2 cup dry roasted peanuts, chopped
Steps
- In food processor, blend pesto ingedients until smooth.
- Toss pesto and pasta. Add chicken strips. Garnish with sprouts, cilantro, carrots, and peanuts, if desired.
