Fondue is the ultimate romantic date dessert. Serve this butterscotch dessert fondue with fresh fruits, cookies, or sweet breads.
2 cups packed brown sugar
1⁄2 cup simple sugar syrup
4 oz. butter
1 cup whipping cream
1 tbsp. vanilla extract
1⁄2 tsp. lemon juice
Mint sprig, for garnish
Assorted dippers (donut holes, marshmallows, dried fruit, cut-up fresh fruit)
- Combine brown sugar, syrup, butter, and pinch of salt in heavy saucepan. Cook over medium heat, stirring until sugar dissolves. Boil mixture 10 min., without stirring, to 280°F.
- Remove from heat and stir in cream, vanilla, and lemon juice until smooth. Return to heat until reduced to desired thickness, if necessary.
- Pour mixture into fondue pot and keep warm over low to medium heat. Serve accompanied by assorted dippers.
