California Avocado-Pineapple Relish

avocado relish

In this fresh relish, chopped onion, diced pineapple and mint are folded into cubed avocados and chilled. Serve over grilled fish or poultry, or use in sandwiches.

Ingredients

1⁄3 cup lemon juice
4 California Avocados, diced
2 cups pineapple, 1⁄4-in. dice
1 cup onion, finely chopped
1⁄4 cup mint, chopped
1 tsp. salt
1⁄4 tsp. crushed red pepper
 

Steps

1. In a bowl, gently fold lemon juice into avocado, coating well. Fold in remaining ingredients and chill at least 1 hr.

2. Serve relish with grilled fish, poultry or meat or layer it on sandwiches.
