Curried Apple Soup

A great combination of flavors. Tart apples, onions, and thyme cooked with curry and pureed into soup. Serve warm with some crusty bread.

Ingredients

4 tbsp. unsalted butter
6 apples, Gala or Golden Delicious, peeled, cored, and diced
1 large onion, diced
3-4 fresh thyme sprigs
1 tsp. curry powder
6 cups chicken stock
Salt and freshly ground pepper, to taste
 

Steps

1. In a large saucepan, melt the butter over med. heat. Add the apples, onions, and thyme sprigs.

2. Cook, stirring frequently, until soft and golden brown, about 15 min. Stir in curry
powder until apples and onions are coated and curry is fragrant, about 30 sec.

3. Pour in stock and bring to a boil. Reduce heat to low and simmer until apples are very soft, about 25 min. Remove from heat and cool slightly.

4. Puree mixture, in batches if necessary, in a blender until soup is smooth. Season with salt and pepper. Serve the soup hot or at room temperature.
