Turkey salad in a bread bowl is a fun presentation for a favorite salad. The curry and lime juice add great flavor, and the chopped vegetables add both color and texture.
4 cups diced, cooked dark-meat turkey
1 cup frozen peas, thawed
1⁄2 cup sliced celery
1⁄2 cup diced red onion
1⁄2 cup diced yellow bell pepper
1- 11⁄2 cups mayonnaise
1 tbsp. curry powder
1 tbsp. lime juice
Salt and freshly ground pepper
4 small boule breads (6-in.)
Parsley sprigs, for garnish
1. Combine turkey, peas, celery, onion, and bell pepper.
2. Mix mayonnaise, curry powder, and lime juice; blend into turkey mixture. Season with salt and pepper to taste.
3. Slice 1 in. from top of each bread and hollow out centers, leaving a thick shell. Fill bread bowls with turkey salad mixture and garnish with parsley.
