10 Rustic Italian Cod loins
30 toast points or toasted sliced baguette pieces
extra-virgin olive oil for brushing
10 plum tomatoes, roasted and skinned
3 cloves garlic, minced
1 tsp. balsamic vinegar
2 tbsp. extra-virgin olive oil
10 fresh basil leaves, chopped
salt and pepper to taste
Cook cod loins as directed. Mix tomatoes, garlic, balsamic vinegar, 2 tbsp. of extra-virgin olive oil, basil and salt and pepper in a non-reactive bowl until well incorporated. Divide tomato mixture over toast points. Slice cod loins into thirds and place atop toast points with tomato mixture and brush with extra-virgin olive oil. Serve three pieces per guest or plate.
