1 1⁄2 cups fresh lime juice
3⁄4 cup soy sauce
6 cups green onion, minced
3 oz. fresh cilantro, minced
3 oz. crunchy peanut butter
3 oz. olive oil
3 cups brown sugar
2 tbsp. fresh gingerroot, minced
1 tbsp. lime zest
1 1⁄2 tsp. red pepper flakes
6 cloves garlic, minced
48 oz. grilled turkey, shredded
30 oz. prepared pizza dough
1 1⁄2 cups green onion, sliced
3 medium carrots, julienned
3 cups bean sprouts
3⁄4 cup fresh cilantro, chopped
3⁄4 lb. reduced-fat mozzarella cheese, shredded
1. In small bowl, combine lime juice, soy sauce, onion, cilantro, peanut butter, oil, brown sugar, ginger, lime zest, red pepper flakes, garlic and turkey. Reserve.
2. Roll pizza dough into rectangles and place on a sheet pan. Cook in a 350° F. oven 4-5 min. until dough is puffy and lightly browned.
3. Top each pizza with turkey mixture, onions, carrot and bean sprouts. Sprinkle each pizza with cilantro and mozzarella cheese.
4. Cover grill and heat pizzas 5-10 min. or until cheese melts.
