Ice Cream Pie

Vanilla and chocolate are just two of the possible ice cream flavors to use for this dessert. Mix and match your favorites, contrasting colors to maintain the marbled appearance.
Ingredients
1 1/2 cups vanilla wafer crumbs
6 tbsp. powdered sugar
6 tbsp. cocoa powder
6 tbsp. butter, melted
1 1/2 gal. chocolate ice cream
1 1/2 gal. vanilla ice cream
1 1/3 cups semi-sweet chocolate chips
2/3 cups Maraschino cherries, coarsely chopped and well-drained
Steps
- Prepare crust: Combine vanilla wafer crumbs, powdered sugar, cocoa and melted butter in bowl; mix well. Press crumb mixture evenly on bottom and up sides of 9-in. pie plate.
- Bake crust for 8 min. in preheated 350°F oven.
- Prepare filling: Combine chocolate and vanilla ice cream in large mixer bowl. Add chocolate chips and cherries. Mix on low-speed for 1 min.; do not over-mix to keep pie’s marbled appearance.
- Spread ice cream mixture into prepared crust; let sit at room temperature for 20 min. before freezing. Cover and freeze until firm.
