Mexicali Potato Bowl
Sweet chili-infused Potato Pearls® EXCEL® Mashed Potatoes, carnitas, tomato salsa and sour cream.
Ingredients
1 pkg Potato Pearls® EXCEL® Original Recipe Mashed Potatoes
1 gal Hot water (170°-190°F)
½ c Sweet cherry peppers, finely chopped, stemmed and seeded
3 lb Carnitas, cooked, shredded
1 Tbsp Garlic, crushed
4 c Tomato salsa
2 c Sour cream
Steps
- Add Potato Pearls® EXCEL® Original Recipe Mashed Potatoes, sweet cherry peppers and garlic to a 4-inch deep, half-steamtable pan. Quickly add hot water, stir completely, making sure to hit all four corners. Set aside.
- Bowl Assembly: In an individual serving bowl place 1 cup Potato Pearls® Mashed Potatoes and top with 4 oz. Carnitas and 2 oz. each tomato salsa and sour cream.
