Minty Tropical Salsa

Colorful and refreshing, use Minty Tropical Salsa to boost flavor and trim calories. For a lean, low fat entrée, pair it with grilled seafood or poultry.

Ingredients

16 fl. oz. (2 cups) apple cider vinegar
1 cup sugar
1 tsp. crushed red pepper
1 cup red bell pepper, chopped
2 cups DOLE® Fresh Frozen Mango Chunks, partially thawed
2 cups DOLE Fresh Frozen Tropical Gold® Pineapple Chunks, partially thawed
1/3 cup fresh mint leaves, chopped
1 tsp. kosher salt

Steps

  1. Place first 5 ingredients in saucepan and simmer over low heat until slightly thickened.
  2. Place mango and pineapple in food processor container and pulse until fruit is coarsely chopped. Place in large bowl.
  3. Add cooled vinegar mixture, mint and salt, stir well. Serve with grilled seafood or chicken.
