Shallots, smoked trout, pea shoots and orzo are combined in a cream sauce to create an appetizer that's finished in mere minutes. It requires little prep and even less cooking time.
2 tbsp. butter
3 shallots, minced
4 oz. smoked trout, flaked
3⁄4 cup heavy cream
2 cups cooked orzo pasta
4 oz. pea shoots, divided
Fresh ground pepper
- Melt butter in large sauté pan. Add shallots and cook until soft, about 5 min.
- Add trout and stir to coat well with the other ingredients.
- Stir in cream and bring to a simmer; cook until slightly reduced and thickened. Add 3 oz. pea shoots; cook until wilted. Stir in orzo to heat through; season with pepper.
- For service, portion orzo onto small plate; garnish with remaining pea shoots.
