Smoked salmon, tomatoes and onions are delicious on flatbread spread with a tangy goat cheese mixture. This wrap makes a delightful sandwich.
12 oz. goat cheese, crumbled
3 tbsp. fresh mint leaves, chopped
8 lavash-style flatbreads
16 oz. peppered smoked salmon, flaked
3 ripe tomatoes, sliced
1 red onion, shaved
2 cups pea shoots (or radish sprouts)
1. Puree goat cheese with chopped mint. Season tomatoes with salt and pepper.
2. To assemble sandwiches, spread each flatbread with 1 1⁄2 oz. goat cheese. Top with 2 oz. of salmon, and remaining vegetables. Roll sandwich tightly and serve.
