A unique take on traditional peanut brittle, this almond brittle recipe from Chef Michael Slavin is a perfect shareable item. “This is easily broken apart, so each person can have it in front of them,” he says. “It’s sweet, spicy, quick and indulgent—a perfect bite.”

Ingredients

3 tbsp. water
1/2 tsp. lemon juice
3/4 cup white sugar
1 tsp. butter
1/2 tsp. baking soda
1/4 tsp. cayenne pepper, fine ground
1/4 tsp. vanilla extract
1/4 cup almonds, coarse chopped

Steps

  1. Place water, lemon juice, sugar and butter in a heavy-gauge saucepan. Cook over medium heat, stirring with a wooden spoon until it reaches a smooth, amber-caramel color.
  2. Remove from heat; fold in baking soda, cayenne pepper and vanilla.  Add almonds and mix to combine.
  3. While still hot, pour immediately onto a marble slab or silicone mat to cool and set.  Crack into pieces; serve and hold at room temperature.
