Savory Waffles with Bourbon Seafood

Savory waffles made with Parmesan cheese are topped with sauteéd shallots, shrimp and scallops cooked in a honey-bourbon sauce. Waffles aren't just for breakfast anymore.

Ingredients

5 eggs, separated
2 oz. grated Parmesan cheese
1 cup milk
1⁄2 tsp. salt
1⁄2 tsp. ground black pepper
2 cups flour
4 oz. butter, melted
2 shallots, minced
1 lb. large shrimp
8 oz. scallops
1 1⁄2 cups honey or maple syrup
2 oz. bourbon
1-2 tbsp. lemon juice
2 tbsp. snipped chives

Steps

  1. Whisk egg yolks and cheese; whisk in milk and salt. Whisk in flour until smooth, then mix in 2 oz. butter.
  2. Beat egg whites with a pinch of salt to stiff peaks; fold into batter. Let stand l hr.
  3. Meanwhile, sauté shallots in remaining butter until soft. Add shrimp and scallops; sauté 1-2 min. In bowl, blend honey with bourbon, lemon juice, and season to taste; pour into skillet and stir. Simmer 1-2 min. to blend flavors. Stir in chives.
  4. Per serving, bake waffles to order; cut into quarters and top with shrimp mixture.
