In this appetizer, layers of rice paper are coated with hoisin and covered with duck, cabbage, carrots and cilantro.
4-6 round rice paper wrappers
2 cups shredded cooked duck
1 cup shredded Napa cabbage
1 cup shredded carrots
1 cup bean sprouts
1⁄2 cup sliced scallions
1⁄4 cup cilantro leaves
Cilantro sprigs and scallion fans, for garnish
1. Spread 1 rice paper wrapper with hoisin; layer on some of duck, vegetables, and cilantro leaves, and top with another rice paper wrapper.
2. Repeat layering until all ingredients are used up. Garnish with cilantro sprigs and scallion fans.
