Summer Salad On the Half Shell

A delightfully refreshing salad that combines mixed fruits and avocado. The avocado dressing adds just the right touch of creaminess to bring the dish together.


1 cantaloupe
1 honeydew melon
1 papaya
2-3 pears, peeled, halved, and cored
1 cup strawberries, hulled
4 ripe Hass avocados, halved and pitted
Avocado Dressing (recipe follows)

Avocado Dressing:
1 ripe Hass avocado, mashed
2 tbsp. fresh lemon juice
1⁄2 tsp. salt
1⁄2 cup fresh orange juice
2 tbsp. honey
1⁄2 cup mayonnaise
Dash hot pepper sauce (optional)



1. Cut fruits into complementary shapes (cubes, dice, or balls) and toss together. Spoon into avocado halves.

2. Prepare Avocado Dressing. Serve with salad.

Avocado Dressing:

In food processor or blender, blend avocado with lemon juice. Add remaining ingredients and blend until smooth.

Yield: Makes about 1 1⁄2 cups.
