It takes two hands to manage this sandwich. Tuna, hard-boiled eggs, lettuce and tomato are stuffed into pita pockets along with french fries and spicy harissa for a delicious and filling meal.
32 oz. oil-marinated tuna, drained
1⁄4 cup capers, drained and rinsed
8 pita breads
6 oz. prepared harissa
2 large tomatoes, sliced
1 med. head iceberg lettuce, thinly sliced
6 eggs, hard-boiled, sliced
1 lb. prepared french fries
6 oz. Moroccan olives
- In medium bowl, combine drained flaked tuna with capers.
- Cut pita breads in half. Spread each half with a thin layer of harissa. Season tomatoes with salt and pepper. Generously line bread with lettuce, then insert layers of tomatoes, tuna, and egg slices. Stuff sandwich with hot french fries, drizzle with additional harissa, and garnish with olives.
