Waldorf Sweet Potato Salad

Lots of flavor and texture in this sweet potato and apple salad with plenty of grapes and walnuts. A sweet vinaigrette tops the mix of fruit and vegetables. Served chilled this salad is a refreshing treat.
2 tbsp. vegetable oil
3 tbsp. apple juice
1 tbsp. plus 1 tsp. white wine vinegar
1 tsp. sugar
1⁄2 tsp. salt
2⁄3 cup walnuts
6 cups sweet potato, peeled, grated
2 red apples, cored, coarsely chopped
1 cup chopped celery
1 cup red seedless grapes, sliced
2⁄3 cup blue cheese, crumbled
Red leaf lettuce leaves
- In a bowl, whisk together oil, apple juice, vinegar, sugar and salt. Reserve.
- On a sheet pan in a hot 350° F. oven, toast walnuts until golden, approx. 10 min.
- In a large bowl, place walnuts, sweet potato, apple, celery, grapes and blue cheese. Pour dressing over salad and toss well.
- Fan lettuce leaves on salad plate. Arrange salad on lettuce leaves and serve.
