Creating fusion items to keep the menu exciting and new

I recently have begun incorporating several new Indian/Italian fusion items on our menu, as these are the two cultures closest to my heart. I offer a three-course prix fixe dinner for $35, which allows diners to sample Italian choices with a twist of Indian spices through dishes like Marsala Ravioli with Indian accents and Grilled Swordfish with coriander, ginger and a curry leaf pesto sauce. By mixing two cooking styles most folks normally wouldn’t put together, we’ve created some really exciting new flavors for our customers.
