Our customers are looking for healthier, lighter menu items that are still very flavorful and satisfying. For our signature Truffled Grilled Lobster, we reduced lobster stock and added it to a truffle vinaigrette. It emulsified beautifully with half the amount of oil we used previously. When you remove fat and calories, you have to add something that will provide a comparable mouthfeel and flavor, and this was a success. We also created a sesame ginger vinaigrette for grilled fish. These new recipes are a result of our participation in Unilever's Seductive Nutrition Challenge, in which operators pledge to reduce a popular dish by 100 calories.
