A by-the-glass hard cider program

We are currently doing three by-the-glass hard ciders: Isastegi, a Spanish Basque sparkling cider made from about 50 varieties of apples. It’s a very traditional style from this region that’s fermented with wild yeast. At the opposite end is Seedlings Farms Cider from orchard owner Peter Klein of South Haven, Michigan. It’s also made from a variety of apples; it has sharp acidity, a very clean flavor and is very dry. The third cider is Poire from Eric Bordelet—probably the premier cider maker in Normandy, France. It’s a classic sparkling pear cider made from about 50 different varieties of pears; it is off-dry with some residual sugars. Jeff Donahue, our beverage director, thinks these are great aperitifs that pair well with our food. He says the Isastegi almost reminds him of an earthy Belgian-style ale that is also 6% alcohol. And there’s nothing better than some sparkling to start a meal!
