To serve the "best of the best espresso" in our restaurants, we partnered with a boutique coffee roaster in Italy who has been roasting coffee beans over wood since 1941. Then we found an artisanal olive oil producer to supply our olive oil. We started an import company to bring these exciting products over for our own concepts and to sell to others. Partnering with these producers supports them in their businesses and helps us vertically integrate ours. The timing is right—everyone is very interested in where ingredients are coming from these days.
