Pairing oysters with sour beers

Rappahannock River (Virginia) oysters go great with a Gueuze Belgian Sour Ale. These are low salinity oysters with a unique buttery sweetness. The balanced tartness and acidity of the Gueuze lends a contrast to the rich umami of the Rappahannock oyster. All Gueuze contain high levels of lactic or acetic acid, much like a champagne or mignonette, which are classic companions to a plate of oysters. A couple of my favorite Gueuze include Giradin Gueuze 1882 (BLack Label), Lindemans Gueuze Cuvée René, and Oude Gueze Tilquin a L'Ancienne.
