Good olive oil is like a great sauce; it can make or break a meal.The type of olive oil I use depends on how I want to finish a dish. For example, I may use a peppery olive oil for a certain meat, or a fruitier olive oil with a fish dish. Maybe a buttery olive oil with some pasta.
Italian cuisine is based on so many high quality ingredients and a fantastic oil is right at the top of the list. My personal favorites: Gianfranco Becchina’s Olio Verde and Trampetti extra virgin olive oil.
