The one area that has completely transformed our business has been listening to what our customers want and giving it to them—all with a smile. Over 80% of what we sell now was not on our menu when we first opened. It was our flexibility to respond to customer wants and needs that has kept us successful and shaped our business into what it is today. As a result, we're under construction on three new locations and well on our way to expanding outside of Chicago. And it's all because I wasn't too stubborn to think my original concept was the final concept. I had to refine.
