Rotating spices with the seasons

Fall is officially here, and seasonal changes are a good time to stock your pantry with fresh spices and get rid of those that you’ve had for too long. Dry spices and herbs get stale over time and they lose their flavor and complexity after a few months. I like to go to a spice store where I can buy spices in bulk, and keep them in airtight mason jars. I always stock up on anti-inflammatory spices like ginger, cinnamon and turmeric, as well as cumin, coriander and yellow curry powder. I love to cook with fennel seeds and dried arbol chilies as well.
