Sumac—It’s not all poisonous!

I love using the spice sumac in these warm summer months. Try substituting it in any dish on which you might squeeze fresh lemon juice. It has a tart flavor that is very nice sprinkled on fish, chicken, and especially hummus. This tart, acidic Middle Eastern spice is a primary ingredient in Za’atar and its lovely deep red color makes for an attractive garnish.
