Taco John’s recently named Kelly Hopper the chain’s chief financial officer.

Hopper has extensive experience in finance and the restaurant industry, starting her career with Ernst & Young before moving over to Yum Brands, where she worked in several positions before moving over to the company’s Pizza Hut brand. There, she worked with franchisees to improve profitability.

Hopper more recently worked with TGI Fridays and c-store chain 7-Eleven. She also worked in the healthcare industry, the company said.

Jim Creel, CEO of Cheyenne, Wyo.-based Taco John’s, called Hopper “a seasoned leader with a successful background ... [who] will add tremendous value to our company.”

Hopper takes over the financial management of the nearly 400-unit fast-food Mexican chain.
