5. Grilling powers summer LTOs
Seafood starred in a couple of popular limited-time offers last summer, including True Food Kitchen’s Fish Tacos (grilled fish with tomatillo avocado salsa, pickled jicama slaw, coconut lime yogurt and Anasazi bean) and Mimi’s Tropical Shrimp Ceviche, composed of grilled shrimp, pineapple salsa, diced tomato, cilantro and fresh lime juice. P.J. Whelihan’s went the poultry route, featuring a Grilled Chicken and Peach Salad, in which both the chicken and peaches were grilled, then combined with mixed greens, candied pecans, cucumber and blue cheese.
