

Fast-food customers are into snacks and value, and Taco Bell is delivering on both with its new Mini Taco Salad.
“The Mini Taco Salad was developed to meet evolving fan cravings for flexible, snackable options that still feel satisfying,” said Heather Mottershaw, VP of pipeline innovation and product development for Taco Bell. “It delivers a familiar Taco Bell favorite in a more approachable format that fits a variety of occasions. Whether fans are looking for a snack, or a ‘treat’ moment, they can get it all without sacrificing flavor.”
The Mini Taco Salad is one of 10 items on the new Luxe Value Menu launched by the Irvine, California-based chain last month. It boasts five new items (including the Mini Taco Salad) and five returning items, all priced from $1.19 to $2.99.
“Taco Bell created the Luxe Value Menu to raise the bar on QSR value—delivering more bold, craveable and innovative menu options that satisfy any Taco Bell craving at $3 or less,” said Mottershaw.
Here’s how she refreshed the brand’s classic Fiesta Taco Salad to give it a modern spin.
A downsized version that’s big on flavor
The original Fiesta Taco Salad ran on Taco Bell’s menu from 1984-2017 and was a fan favorite. The base is a crisp fried tortilla bowl that’s filled with seasoned ground beef, shredded lettuce, shredded cheddar cheese, diced tomatoes, sour cream, rice and black beans.
“We took inspiration from the beloved Fiesta Taco Salad and simply reimagined it at a smaller scale, making that original [shell] smaller to create a more snackable innovation at an accessible price point,” said Mottershaw. “It’s more aligned with how fans eat today.”
The smaller shell is filled with ingredients similar to the original: Seasoned ground beef, cheddar cheese, shredded lettuce and diced tomatoes, but refried beans replace black beans and the rice and sour cream were eliminated. Instead, Mottershaw introduces creamy Chipotle Sauce to the build.
“The Chipotle Sauce adds a creamy, bold flavor that complements the seasoned beef and refried beans while balancing the fresh elements like lettuce and tomatoes,” said Mottershaw. “It helps elevate the Mini Taco Salad, ensuring the smaller format still delivers a rich, craveable experience.”
The base price for the Mini Taco Salad is $2.49 but guests can also build on their order by adding chopped onions, purple cabbage, jalapeños, guacamole or any of Taco Bell’s sauces, including reduced-fat sour cream, creamy jalapeño sauce, creamy garlic or avocado ranch.
Sauces have become an increasingly important ingredient in fast-food menu innovation and differentiation, and Taco Bell is no exception. “Sauces are a core part of Taco Bell’s flavor identity and play a key role in delivering bold, craveworthy experiences,” said Mottershaw. “From the return of fan-favorite Volcano Sauce to unexpected collaborations like Hidden Valley Diablo Ranch, sauces allow fans to layer flavor, add contrast, and create differentiation across their favorite menu items—helping even value-priced offerings feel innovative, satisfying and craveable.”
Cross utilization is also key to the brand’s R&D, she added. The entire Luxe Value Menu was designed with scale and consistency on the forefront, allowing restaurants to cross-utilize familiar ingredients already in the system to create new formats while maintaining efficiency and quality across more than 8,000 U.S. locations.
Live Más Live lives on
Taco Bell first introduced the Mini Taco Salad at its 2025 Live Más Live event last March, where salsa verde and lime contributed to the flavor profile. The item was successfully tested during an extensive period last year.
“Live Más Live is where innovation comes to life for our fans. It gives us a real-time platform to showcase what’s next, spark excitement and listen closely to our community,” said Mottershaw. “The Mini Taco Salad is a great example—it debuted at Live Más Live 2025, where early fan buzz and feedback helped shape its path to the Luxe Value Menu."
Details on Live Más Live 2026 are not available to share yet, she said, but the event “has proven to be a powerful way for us to connect culture, innovation and community. What we can say is that Taco Bell remains focused on pushing boundaries with bold flavors, new formats and craveable experiences that show up wherever our fans want to engage—on the menu and beyond.”
