Emmy Squared brought Detroit-style pizza to New York, but that's hardly the whole story. The 27 locations that stretch from NYC as far as Nashville, Atlanta, North Carolina, Florida and soon, Las Vegas, offer the 18-44-year-old customer base a comfortable but trendy gathering place with chef-executed food and drinks."Unique flavors and unique dining experiences differentiate Emmy Squared," said CEO Troy Tracy. Most of the menu is made in house, using organic flour for the pizza crust, fresh herbs and sauces--even slicing Brussels sprouts and mushrooms in the kitchen. Burgers are also a draw. There's a full bar with wine, cocktails and local beers.Tracy attributes the concept's 31% year-over-year sales spike to the fact "that we can grow in concentric circles and develop sites quickly--six to nine months instead of 12 to 15," he said. He is on track to open six to seven corporate restaurants a year, with eight to 12 in 2025. Emmy Squared is considering franchising, possibly as soon as next year.
