In the ever-more-crowded chicken space, Waldo's Chicken and Beer offers options: traditional pickle-brined Southern fried chicken (never frozen) alongside rotisserie birds, both supported by made-from-scratch sides, sauces and dressings. For dessert: banana pudding. On the bar side, there's beer (rotating weekly) and wine, but also cocktails. Restaurants also have lots of TVs for sports watching. Founder Mark Waldo opened the first location in Nashville in 2019. Growth has come with a local owner-operator strategy, and the chain expects to reach up to 35 units by the end of 2025.
