Lazy Dog Restaurants is a trendsetter in the casual-dining sector, but founder and CEO Chris Simms is always paying careful attention to what his guests are seeking. He steers the menu toward “approachable innovation,” balancing that direction with “craveable classics.” The latter is an inventive take on comfort food, infusing favorites with global flavors and chef-driven techniques.

Balancing value with high-end offerings is also key to success for the Costa Mesa, California-based chain, which now numbers 51 locations. Affordability is a lure for many restaurant customers, so Lazy Dog’s menu offers made-from-scratch meals for $15, including dessert. But Simms also focuses on innovating the top end of the menu, adding prime steaks and seafood for guests seeking a premium experience. He also expanded the small plates section to appeal to those who want snackable, smaller portions.
