Chicken a la Jessie

This recipe was developed to incorporate more fruits into main dishes.
Ingredients
4 8-oz. grilled chicken breasts
3 cups fresh baby spinach
1/4 cup blanched, slivered almonds
2 oranges, segmented
6 strawberries, quartered
1 oz. olive oil
1 tsp. minced garlic
1/4 cup lemon juice
4 mint sprigs
Steps
- Slice chicken breast in strips, on diagonal.
- Combine chicken, spinach, almonds, oranges and strawberries, and toss gently.
- Mix olive oil, garlic and lemon juice. Pour over salad mixture and toss gently.
- Portion into 8-ounce servings, garnish with mint sprig and serve.
