Smoked chicken and smoked gouda cheese come together in this hearty salad with Barbecue Vinaigrette Dressing.
16 cups mixed salad greens, washed and dried
2 cups diced smoked chicken
2 cups diced smoked Gouda cheese
1 1⁄2 cups diced, peeled, and seeded cucumbers
1 cup crumbled cooked bacon
2 cups diced tomato
1 1⁄2 cups diced avocado
Barbecue vinaigrette dressing (see note), for service
Note: To make barbecue vinaigrette, combine 1⁄4 cup barbecue sauce with 1 cup prepared vinaigrette dressing.
- Arrange 2 cups of salad greens on each of eight salad plates.
- Top salad greens with rows of smoked chicken, smoked Gouda, cucumbers, bacon, tomato, and avocado.
- Serve with barbecue vinaigrette on the side.
