Fresh Fruit Trifle
A classic English dessert, this recipe features layers of vanilla diplomat cream, almond sponge cubes and fresh fruit arranged in a beautiful verrine glass. The dessert is an elegant twist on a comforting favorite.
Ingredients
Almond sponge
380g almond flour
380g sugar
380g eggs
200g butter
50g PreGel 5-Star Chef Pastry Select™ Vanilla Compound
50g all-purpose flour
Vanilla diplomat cream
350g PreGel 5-Star Chef Pastry Select™ Pastry Cream Superior (Cold Process)
800g milk
200g cream
50g PreGel 5-Star Chef Pastry Select™ Vanilla Compound
280g whipped cream
Steps
Almond sponge
- In the mixer, whisk together the almond flour and the sugar.
- Combine the eggs and the PreGel 5-Star Chef Pastry Select™ Vanilla Compound. Add to the mixing bowl and whip on high speed for 3 minutes.
- On low speed, add the sifted flour and then the butter.
- Bake in a frame at 160°C/320°F for about 20 minutes or until golden.
- Cool completely and cut into small cubes.
Vanilla diplomat cream
- Whisk all ingredients together except the whipped cream until all powder is dissolved and mixture is uniform.
- Allow to set in refrigerator, at least one hour.
- Hand whisk pastry cream to result in a smooth texture. Gently fold in the whipped cream.
- Set aside for assembly.
Tips
You may replace 5-Star Chef Pastry Select™ Vanilla Compound with PreGel Vanilla Purissima Bean Traditional Paste (Vanilla Bean) or PreGel Vanilla Velvet Traditional Paste (American Vanilla).
