Tender flaked grilled salmon is the basis for this version of a club sandwich. Bacon, romaine lettuce and Caesar salad dressing top focaccia bread for a very tasty treat.
8 6-oz. salmon fillets
2 tbsp. olive oil
2 tbsp. sea salt
1 tbsp. cracked black pepper
16 slices herbed focaccia bread, grilled
10 oz. hearts of romaine
6 oz. Caesar salad dressing
3 tomatoes, thinly sliced and seasoned
16 slices bacon, fried
1. Brush salmon fillets with olive oil and gently rub with sea salt and pepper. Set aside for 10 min.
2. Grill salmon for approx. 4 min. per side. Set aside and flake gently.
3. In a large mixing bowl, toss chopped hearts of romaine with dressing.
4. Place salad on base of grilled bread. Top with flaked salmon, sliced tomato, bacon, and remaining focaccia. Serve immediately.
