Honey Almond Banana Cake

Make a healthful dessert by using brown sugar, honey and banana puree to sweeten this cake. Mixing almond flour with white flour is another way to kick up the nutrients.
1 lb. 10 3/4 oz. self-rising flour
10 1/4 oz. natural almond flour
1 lb. 5 1/2 oz. butter
1 lb. 5 1/2 oz. golden brown sugar
2 lb. 3/4 oz. local honey
1 lb. 2 1/2 oz. banana puree
1 lb. 2 1/2 oz. cage-free eggs
6 oz. sliced almonds
- Grease sheet pan.
- Melt butter, sugar and honey until just melted. Remove from heat.
- Combine flours. Add melted butter mixture, then add banana and eggs. Mix until smooth.
- Pour 9 pounds 2 ounces batter into prepared sheet pan. Sprinkle 6 ounces of sliced almonds over top.
- Bake at 350°F for 25 to 35 minutes.
