Honey Almond Banana Cake

Make a healthful dessert by using brown sugar, honey and banana puree to sweeten this cake. Mixing almond flour with white flour is another way to kick up the nutrients.


1 lb. 10 3/4 oz. self-rising flour
10 1/4 oz. natural almond flour
1 lb. 5 1/2 oz. butter
1 lb. 5 1/2 oz. golden brown sugar
2 lb. 3/4 oz. local honey
1 lb. 2 1/2 oz. banana puree
1 lb. 2 1/2 oz. cage-free eggs
6 oz. sliced almonds


  1. Grease sheet pan.
  2. Melt butter, sugar and honey until just melted. Remove from heat.
  3. Combine flours. Add melted butter mixture, then add banana and eggs. Mix until smooth.
  4. Pour 9 pounds 2 ounces batter into prepared sheet pan. Sprinkle 6 ounces of sliced almonds over top.
  5. Bake at 350°F for 25 to 35 minutes.
